For a healthy hamburger substitute, try making black bean burgers with chipotle ketchup. Rinse and soak 1 1/4 cups of black beans overnight. The next day, mix the beans with 3 cups of water and 1 bay leaf. Cook this mixture for about an hour. Meanwhile, cook 2 plum tomatoes, half an onion and 2 garlic cloves. Add 1 tablespoon of tomato paste, 1 tablespoon of wine vinegar, 1 diced chipotle chili in adobo sauce, 3/4 teaspoon of cumin and 1/4 teaspoon of salt. Cook until thickened, and then set aside to cool.
Heat 1/2 tablespoon of canola oil in a frying pan, and saute the remaining onion half, 1/2 of a red bell pepper and 2 garlic cloves. Remove from heat, add a 1/4 teaspoon of salt, and then set aside to cool. Combine the beans, onion mixture, 1/4 cup chopped pecans, 1 green onion in a food processor, seasoning with one teaspoon of cumin and 1/2 teaspoon salt. Add 1 egg and 3/4 cup of whole-grain bread crumbs. Form the bean mixture into six patties. Heat one tablespoon of canola oil in a frying pan, and cook the patties for about seven minutes until browned.
