To make red pepper-scallion corn muffins, first preheat the oven to 350 degrees Fahrenheit, and coat a large 6-cup muffin tin with non-stick spray. Warm 2 tablespoons canola oil in a skillet over medium heat, and cook 1 large, chopped red bell pepper until tender. Add 4 thinly-sliced scallions, and cook until softened; remove the skillet from the heat. Combine 1 1/2 cups cornmeal, 1/2 cup whole grain pastry flour, 1/4 teaspoon baking soda, 1/2 teaspoon salt, 1 3/4 teaspoons baking powder and 1/8 teaspoon black pepper in a large bowl and stir.
In a second bowl, combine 1 cup fat-free plain yogurt, 1 large egg, 2 egg whites, 2 teaspoons brown sugar and 1/4 cup canola oil. Whisk together and fold in 3/4 cup of canned corn kernels. Fold in the cooked bell pepper and scallion mixture, then pour the wet ingredient mixture into the dry ingredients. Stir until the ingredients are moistened, pour into the muffin tin and bake for 25 to 30 minutes.
For chicken piccata, place 12 ounces of boneless, skinless chicken tenders between two pieces of plastic wrap. Flatten the chicken with a rolling pin until it is 1/4 inch thick, then move the flattened chicken from the plastic wrap, and dredge lightly in flour. Add 4 tablespoons olive oil to a large skillet, and cook over medium-high heat until the oil sizzles. Cook the chicken in the oil for 2 minutes per side, or until cooked through.
Add the juice of 2 freshly squeezed lemons, 2 tablespoons chopped parsley and 2 teaspoons capers to the skillet, and bring the entire mixture to a boil. When it boils, reduce the heat and simmer for 2 minutes. Season with black pepper to taste and serve.Learn more about Diet Plans
