Some recipes that follow the guidelines of the Daniel Fast are massaged kale salad and baked delicata squash with kale and beans. Some Daniel Fast recipes that are quick to prepare are purple heart fruit smoothies and raw vegan zucchini noodles.
To make massaged kale salad, place 4 cups of kale, torn into bite-size pieces, in a large bowl. Peel and pit 2 avocados, place them in the bowl, and massage the avocados into the kale by hand until the leaves are coated. Add 2 tablespoons of fresh lemon juice, 1 1/2 cups of halved cherry tomatoes, 1 tablespoon of chopped fresh basil and 1/4 teaspoon of salt. Garnish the salad with sunflower seeds and/or pepitas.
To make baked delicata squash with kale and beans, bake 2 pounds of halved, seeded delicata squash for 35 to 40 minutes at 375 degrees Fahrenheit. Cook 1 cup of chopped onion and 1 clove of minced garlic in oil until the onion is translucent, then add 1/2 cup of water, 4 cups of chopped kale, 1 15-ounce can of cannellini beans, 1/2 teaspoon of dried thyme and 1 tablespoon of chopped parsley. Peel the cooked squash and cut it into 1-inch cubes. Add the squash to the mixture and cook for an additional three to five minutes.
Make a purple heart fruit smoothie with pear, pineapple, orange, watermelon, pitted dates and water. To make raw vegan zucchini noodles, cut 5 raw zucchini squash with a spiral or julienne slicer, and coat with pesto.
