Quick and simple recipes for the Daniel Diet, also called the Daniel Fast in religious groups, include soups, salads, salsa, breakfast cereal, lettuce tortillas and even pizza. The Daniel Diet focuses on fruits, vegetables, grains, nuts, seeds and legumes, and eliminates meat and animal products, dairy and refined, processed foods.
The easiest of recipes for this diet include fresh veggies and fruits, either saut?ed in high-quality olive oil or served alongside hummus. To make hummus, combine 1 can chickpeas (rinsed and drained); 1/4 cup each water and tahini; 2 tablespoons each extra virgin olive oil and lemon juice; 2 cloves minced garlic; 1/4 cup fresh parsley, packed; 1/2 teaspoon salt and 1/4 teaspoon cumin in a food processor, and whirl until smooth.
Another quick and easy recipe is a blackberry salad. In a large bowl, toss together 4 cups mixed salad greens; 1 cup blackberries; 1 avocado and 1 mango, each peeled, pitted, and cut into 1 inch cubes; and 1/2 cup pecans. Change this salad up by substituting blueberries for the blackberries, or peaches for the mango.
Make Nutty Fruit Cereal for a fast breakfast dish. Mix 1 sliced banana with 1/3 cup fresh blueberries; 1 tablespoon each chopped walnuts and almonds; and 1 teaspoon unsweetened coconut flakes. Pour 1/2 cup unsweetened almond or rice milk over cereal.
