Divide the mixture among the ramekins, and carefully break an egg into each ramekin. Bake the eggs for about 10 minutes, or until the whites are firm while the yolks are still slightly runny.
To make black bean and corn salad, rinse and drain 29 ounces of canned black beans, and thaw 2 cups of frozen corn, instructs the American Diabetes Association. Chop 1 red bell pepper, and prepare 1/2 cup each of chopped red onion and chopped cilantro. Mix the ingredients together in a bowl. Squeeze the juice from 2 small limes into another bowl, and stir in 3 tablespoons of olive oil; 1/2 teaspoon of cumin; and 1/4 teaspoon each of garlic powder, black pepper and cayenne pepper.
