Broccoli leaves contain phytonutrients and higher amounts of beta carotene than the stems or florets, says the George Mateljan Foundation for the World's Healthiest Foods. Broccoli florets contain up to seven times more beta-carotene than broccoli stems, but both parts are equally high in B vitamins and fiber.
