A single, medium-sized sweet potato that weighs 4 ounces contains approximately 20 grams of carbohydrates. Sweet potatoes are rich in vitamins A and C and are good sources of manganese and beta-carotene.
Sweet potatoes are large, thick, tube-like root vegetables that are only distantly related to the normal potato. In addition to vitamins A and C, sweet potatoes contain vitamin B6 and potassium. They are also decent sources of copper and fiber.
Especially popular at Thanksgiving, sweet potatoes are most easily prepared by roasting them in the oven until soft. The color of a sweet potato can range from orange, yellow or brown to purple or beige.
