Indian vegetarian recipes that are easy to make include red lentil curry, vegetarian korma, spicy vegan potato curry and Indian chickpeas. Some of these recipes call for prepared curry pastes, powders and mixes which can usually be found in large grocery stores.
To make red lentil curry, cook 2 cups red lentils for 20 minutes until tender. Meanwhile, cook an onion in oil until it has caramelized, about 20 minutes. Mix together 2 tablespoons curry paste, 1 tablespoons curry powder, 1 teaspoon each of turmeric, salt, cumin, chili powder, sugar, garlic and fresh ginger; add this mixture to the onion and cook until fragrant. Stir in a 14 ounce can of tomato paste, mix thoroughly, then add this sauce to the cooked and drained lentils. Lentils are a common ingredient in Indian cooking, often served as a side dish known as dhal.
To make vegetarian korma, cook an onion, a teaspoon of ginger, 4 cloves garlic, 4 cubed potatoes and 2 carrots. Add 1 seeded jalapeno pepper, 4 ounces of tomato sauce and 3 tablespoons cashews. Cook until potatoes are tender. Add a cup of heavy cream, 1 cup frozen peas and 1/2 each of a green and red pepper. Simmer for 10 minutes; serve with cilantro.
