Chicken tortilla soup, cherry-blueberry smoothies and white bean and salmon salad are three healthy recipes for people with Type 2 Diabetes. These recipes are easy to make and do not significantly raise blood sugar levels.
To make chicken tortilla soup, cook 1 chopped onion in 2 teaspoons of olive oil over medium-high heat for two minutes. Add 4 cups of fat-free chicken broth, 2 cups of chopped cooked chicken breast, 1 cup of corn kernels, 1/2 cup of salsa and 2 tablespoons of lime juice, as well as 1/2 teaspoon of cumin, 1/4 teaspoon of salt and 1/2 teaspoon of pepper. Cook uncovered for 10 minutes. Add 9 broken tortilla chips, and serve the soup with cilantro and lime wedges.
To make a cherry-blueberry smoothie, blend 1 1/2 cups of frozen sour cherries with 1 cup of unsweetened vanilla almond milk, 6 ounces of non-fat blueberry-flavored Greek yogurt, 1/2 cup of frozen blueberries and 1 banana until smooth.
To make a white bean and salmon salad, whisk 2 tablespoons of lemon juice with 1/2 teaspoon of lemon rind, 1 tablespoon of olive oil, 1/2 teaspoon of pepper, 1/4 teaspoon of salt and 1/2 teaspoon of minced garlic. Toss the mixture with 20 ounces of canned great northern beans, 6 ounces of flaked salmon, 4 sliced green onions and 1/4 cup of chopped parsley. Serve the salad on lettuce leaves.
