To make the unstuffed cabbage soup, warm up 2 teaspoons of olive oil in a pot over moderately high heat, instructs the American Diabetes association. Fry 1 diced onion until it becomes translucent, and then brown 1 pound of lean ground turkey. Chop 1/2 head of cabbage, and saute it for a few minutes before pouring in 32 ounces of unsalted chicken broth, 1 1/2 cups of canned crushed tomatoes, 2 cups of water, 1/4 teaspoon of black pepper and 1/4 teaspoon of cayenne pepper. Let the soup simmer for seven minutes before bringing it to boil and stirring in 1 cup of instant brown rice. Lower the heat, cover the pot, and allow the soup to cook for a further five minutes before serving.
To make the Asian chicken salad, combine 2 cups of cooked diced chicken breast, 9 ounces of Romaine lettuce, 1 cup of shredded cabbage, 1/4 cup of toasted almond slivers and 1 tablespoon of toasted sesame seeds in a bowl, directs the American Diabetes Association. Stir 2 tablespoons of light soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of canola oil, 1 teaspoon of toasted sesame seeds and 1/4 teaspoon of red pepper flakes together in another bowl to make a dressing, and add this to the chicken and vegetables.
