To make Paleo Leap's recipe for granola bars, soak 4 cups of raw mixed nuts overnight, then roast at 120 degrees Fahrenheit for 10 to 12 hours. Roughly chop half the nuts. Add the other half to a food processor, and pulse into a soft powder. In a small saucepan, heat 1/3 cup coconut oil, 1/3 cup almond butter, 1/4 cup raw honey, 1 teaspoon vanilla extract and 1 teaspoon cinnamon. Heat until bubbles form, then remove from the stove. In a large bowl, add the chopped and ground nuts, the cooled almond butter mixture and 1 cup assorted dried fruits, such as raisins and dates. Pour the mixture into a parchment-lined baking dish, and press flat. Cover with another sheet of parchment, and let stand at room temperature for about 2 hours. Place in the freezer for 1 hour, then cut into bars and serve.
