To make the mushroom veggie burger, start by sautéing one small diced onion in vegetable oil for three to five minutes. Add 3 diced green onions, 1/2 teaspoon of cumin and 3/4 cup of fresh diced mushrooms, instructs About.com. Cook this mixture until the mushrooms are soft, which takes about five minutes, and then set the pan aside.
Mash up one 15-ounce can of pinto beans with a fork or potato masher or in a food processor, adds About.com. Use a large bowl to combine the mashed beans with the mushroom and onion mix. Stir in 1 teaspoon of parsley and salt and pepper to taste.
When the mixture is well-combined, shape it into patties about 1 inch thick. Patties that are too thin fall apart, while patties that are too thick are hard to cook all the way through, explains About.com. Pour 1 to 2 tablespoons of oil into a pan and cook the patties for roughly three minutes on each side. You can also cook the patties on an indoor grill.Learn more about Nutrition & Diets
