To make berry oatmeal muffins, line 12 muffin cups with paper or silicone, states the Kidney Community Kitchen. Combine 1 cup of flour, 2/3 cup of light brown sugar, 1/2 cup of instant oatmeal and 1/2 teaspoon of baking soda. In a separate bowl, whisk 2 eggs and stir together with 1/2 cup of applesauce, 1/4 cup of canola oil, the grated zest from a lemon and orange, and 1 tablespoon of lemon juice. Gently stir in 3/4 cup fresh or frozen blueberries and raspberries. After spooning into muffin tins, bake for 20 minutes at 350 degrees Fahrenheit.
To make parsley pilaf, cook 1 cup of long grain rice with 2 tablespoons of margarine and 1 chopped medium onion until the rice is browned, explains the Kidney Community Kitchen. Pour in 1 3/4 cups of chicken or vegetable broth, and allow the broth to boil. Reduce heat to low and cover. Simmer for approximately 20 to 22 minutes, until the rice is tender and fluffy. Sprinkle with 2 tablespoons of freshly chopped parsley.
