What Is a Good Recipe for a High Cholesterol Diet?

For someone on a diet due to high cholesterol, a good recipe will contain lean meat or fish, fresh vegetables and fruit, low-fat dairy, increased fiber and whole grains, as recommended by the American Heart Association. When cooking foods on this diet plan, liquid vegetable oil should be used in place of solids such as butter.

Lentil soup with avocado salsa

This delicious soup is full of flavor and cholesterol friendly foods. It makes about six servings and is filling and satisfying. The avocado salsa is great as a topping for the soup.

Ready In: 1 hour 15 min.

Soup ingredients:

  • 2 tbsp. olive oil
  • 1 cup chopped onion
  • 1/2 cup each chopped carrots and celery
  • 2 tsp. salt
  • 1 lb. rinsed lentils
  • 1 can diced tomatoes

  • 2 qts. vegetable broth

Salsa ingredients:

  • 2 tbsp. olive oil
  • 2 tbps. rice vinegar
  • 1/4 tsp. ground cumin
  • 1 avocado, chopped
  • 2/3 cup chopped papaya
  • 1/3 cup chopped red pepper
  • 1/4 cup chopped cilantro
  1. To make the soup, saute the onion, carrots, celery and salt in the olive oil for about 7 minutes.
  2. Add the lentils, tomatoes and broth and mix well. Bring to a boil, then reduce the heat to simmer. Cover and cook for 40 minutes or until the lentils are tender. If desired, use a stick blender to puree to the desired consistency.
  3. To make the salsa, whisk together the olive oil, rice vinegar and cumin in a small bowl.
  4. Mix in the chopped avocado, papaya, red pepper and cilantro. Stir to combine and refrigerate until the soup is done.
