When following the Atkins Diet, poultry, fatty seafood, pork, red meat, low-fat vegetables, eggs, butter, full-fat dairy, nuts and seeds are all acceptable. A dieter should avoid sugars, grains, trans fats, vegetable oils, high-carb fruits and vegetables, starches and legumes.
Beef, lamb, bacon, pork and chicken are all acceptable meats on the Atkins Diet. Fatty fish and seafood, such as trout, salmon and sardines, are ideal as well. A dieter should try to eat eggs that are pastured or enriched with omega-3 fatty acids. Acceptable low-carb vegetables include asparagus, broccoli, spinach and kale.
When eating dairy, a dieter should choose full-fat products, such as full-fat yogurt, butter, cheese and cream. Foods that are healthy and high in fat, such as avocados, coconut oil, extra virgin olive soil, sunflower seeds, almonds, walnuts and macadamia nuts, can be eaten. Water is the best beverage for the Atkins Diet, and green tea and coffee are excellent options as well.
During the first two weeks of the Atkins diet, it is important that a dieter minimize healthy carb sources. After that initial period, the dieter can start introducing healthy carbs again, such as high-carb vegetables and fruits, potatoes, oats, rice and other healthy grains. Eating high-fat foods, such as bacon, cheese and dark chocolate, is acceptable because reducing carbs makes the body use fat as a preferred energy source.
