The first two weeks of the Atkins Diet allow individuals to eat cheeses, low-carbohydrate vegetables, some higher-carbohydrate vegetables and healthy oils. Meat, fish and poultry are also acceptable foods during the first two weeks.
The Atkins Diet limits carbohydrate intake, which requires limiting or eliminating certain foods. Meats can be eaten without limitation because most do not contain carbohydrates. Cheeses and low-carbohydrate vegetables can be eaten but must be limited, including cheddar cheese, mozzarella, iceberg lettuce, cucumbers and mushrooms. Higher-carbohydrate vegetables can be eaten sparingly, including asparagus, avocados, broccoli and eggplant. Garnishes, dressings and herbs are also acceptable, including hard-boiled eggs, sour cream, oil and vinegar, basil and garlic.
