Some easy soup recipes for diabetics include a cabbage soup recipe from the American Diabetes Association and a tomato soup from the Diabetes Forecast magazine. The recipes offer nutrition facts to help with meal planning.
To prepare the cabbage soup according to the instructions from the American Diabetes Association, cook 1 diced onion in 2 teaspoons of olive oil before adding and browning 1 pound of lean ground turkey. Stir in 1/2 of a chopped head of cabbage and continue to cook the mixture for another four minutes. Pour in 1 1/2 cups of canned crushed tomatoes, 32 ounces of unsalted chicken broth and 2 cups of water. Season with black pepper and cayenne pepper. Let the soup bubble gently for seven minutes before bringing it to boil and incorporating 1 cup of instant brown rice. Allow the soup to stew for another five minutes.
Follow the tomato soup recipe from the Diabetes Forecast magazine by frying 1 diced onion, 2 diced celery stalks and 1/4 cup of diced fennel in 2 teaspoons of olive oil for approximately six minutes. Cover the saucepan, and allow the vegetables to cook gently for three minutes. Pour in 1 1/2 pounds of diced fresh tomatoes and 2 1/2 cups of low-fat, reduced-sodium chicken broth. Simmer the soup for approximately 25 minutes before blending it until smooth. Reheat the soup, and stir in 3 tablespoons of half-and-half, 2 teaspoons of butter and 1/3 cup of chopped fresh chives. Add salt and pepper to taste.
