All Daniel Fast recipes include healthy options. The Daniel Fast diet is a healthy diet that mostly features fruits, vegetables, legumes, whole grains, nuts and seeds. Three examples of healthy Daniel Fast recipes are apple and oat porridge, tofu breakfast scramble and red bean soup.
To make apple and oat porridge, bring two quarts of water to a boil in a saucepan. Add the oat bran, and let the water continue to boil. After boiling for one minute, reduce the heat, and simmer the mixture for two minutes. Next, turn off the heat, and add raisins, spices and the apple. Allow the porridge to stand until the pieces of the apple soften. Turn the apple pieces periodically. Once the apple pieces are soft, add the almond milk.
To make tofu breakfast scramble, spray a pan with olive oil. Add some firm tofu, zucchini, 1 tomato, ½ onion, 2 green onions, 1 red pepper, some fresh cilantro and 1 clove of garlic. Dice all of the ingredients, and fry them until the vegetables are soft and ready to eat. Sprinkle salt and pepper onto the dish. Serve it with tomato paste.
To make red bean soup, heat some olive oil in a saucepan, and mix in some bell peppers, garlic, onions and bay leaves. Cook for about two minutes. Stir in the red beans, and cook for two more minutes. Add the stock, and bring the mixture to a boil. Once boiling, lower the heat, and simmer the soup for 1 1/2 hours. Stir intermittently, add the parsley and salt, cover the sauce pan, and cook for 15 minutes. At this point, get rid of the bay leaves. Next, puree the beans in a food processor. Afterward, top each serving with a sprinkle of rice for a garnish.
