Vegetable soup and burrito beef are recipes that adhere to the Atkins diet and can be made in a slow cooker. The Atkins diet is a low-carbohydrate diet that emphasizes protein and fat as a method to lose weight.
Vegetable soup can be made easily with a slow cooker or a Dutch oven. Use vegetables that are low in carbohydrates, such as mushrooms, cabbage, red onion, zucchini and green beans. Add 4 cups of water and 5 1/4 cups of vegetable broth, as well as seasonings such as thyme, parsley, black pepper and salt, and cook for four hours on low heat. Transfer the vegetables to a food processor in batches, and puree or chop them to varying degrees. Transfer everything back to the slow cooker, and stir to combine the pureed and chopped batches. Garnish with shredded carrot, and serve.
To make burrito beef, use 32 ounces of boneless steak with all of the fat trimmed off. Add 1 teaspoon of minced garlic, 2 teaspoons of chili powder, 4 servings of green taco sauce, 1/2 teaspoon of cumin and 1/2 teaspoon of salt to the slow cooker, along with the steak and 1 jalapeño pepper. Cover, and cook on low for eight hours. The meat should be very tender and easy to shred with two forks. Mix the shredded beef well with the cooking juices, and serve.
