The macula of the retina, located in the back portion of the eye, is responsible for focusing central vision, explains Nature's Pantry. Lipid peroxidation is associated with macular degeneration. Polyunsaturated vegetable oils, such as soybean or safflower oil, are highly susceptible to lipid peroxidation. These oils interfere with normal cell function and produce damaging free radicals. In contrast, the saturated fat in coconut oil resists peroxidation, and the stable properties of coconut oil are protective against free radicals.
