Some cancer-fighting diet recipes include Tofu Vietnamese Sandwich, Easy Lemon Lentil Soup with Spinach and Ginger Ale with Frozen Grapes. These are recommended by the American Institute for Cancer Research and Fitness magazine, respectively.
To make the Tofu Vietnamese Sandwich, first marinate quartered squares of baked tofu in a bag with lime juice, ginger and soy sauce. Leave for 40 minutes, turning halfway through. While that marinates, dissolve sugar by whisking it with rice vinegar, then add carrots, daikon and cucumber, each cut into matchsticks. Combine with a fork, then set aside for half an hour. Halve a wholewheat baguette and grill each half cut-side down. Pat down the tofu and grill, lightly coated in cooking spray. Finally, apply Sriracha dressing to each half of the baguette and place the tofu on the bottom half. Drain the vegetables and add them on top, then finish with scallions, jalapenos and cilantro to assemble, notes the American Institute for Cancer Research.
For Lemon Lentil Soup with Spinach, bring lentils to a boil and add tomatoes, extra virgin olive oil, turmeric and garlic to simmer. Add ginger, rosemary and bay leaf, wrapped in a cheesecloth, removing when the lentils are tender. Add the spinach and allow to wilt, followed by the lemon juice. Then, crush the garlic inside the pan and season with salt and ground black pepper to serve, states Fitness.
