Certain foods that are rich in iron are beef, liver, chicken, turkey, fish and shellfish.
Other sources of iron include dark, leafy vegetables such as spinach; legumes such as kidney and navy beans, lentils and chickpeas; tofu; and dried fruits such as raisins and prunes, states the National Heart, Lung, and Blood Institute.
Eating iron-rich foods increases the amount of hemoglobin in the blood stream, which is necessary to support oxygen in the red blood cells, says the National Heart, Lung, and Blood Institute.
The lack of vitamin B-12 can also contribute to low red blood cell count, claims the National Heart, Lung, and Blood Institute. Good sources of vitamin B-12 are meats, eggs and dairy products. Folic acid also supports red blood cell count as it promotes the creation of new cells within the body. Folic acid can be found in spinach, black-eyed peas, liver, eggs, bananas and oranges.
Doctors may also prescribe vitamin C to encourage iron absorption in the body, subsequently aiding red blood cell count. Sources of vitamin C are citrus fruits and most vegetables, according to the National Heart, Lung, and Blood Institute.
