To make Atkins chili, gather 1 tablespoon of olive oil, 1 large chopped onion, 6 large garlic cloves (minced), 2 medium jalapenos (minced), 2 pounds of ground sirloin and between 2 and 4 tablespoons of chili powder (adjust to taste). Also required are 1/2 teaspoon of salt, pepper to taste, 1 16-ounce can of diced tomatoes (these should be without added sugar), 2 cups of chicken broth (also without added sugar) and 2 cups of chicken broth (no added sugar as well). The recipe takes approximately 15 minutes to prepare.
Pour the oil into a heavy saucepan and heat to medium-high, then add the garlic and onions. The ingredients should be sauteed until the onions are transluscent, about eight minutes. Add the sirloin, break it up with the spatula and cook until it is brown. Add the salt, pepper, jalapenos and chili powder. Next, add the chicken broth and dried tomatoes.
Reduce the heat to low and simmer for a minimum of 90 minutes.
Put on gloves to mince the jalapenos. For spicy chili, mince the membranes and seeds with the jalapanos. For mild chili, remove membranes and seeds from the jalapenos. Ensure ingredients have no added sugar, or they must be added to the total daily carbohydrate amount.
