How Would You Make a Foil Potato Recipe?

Foil is a good choice for preparing roasted potatoes over the grill or a cooking fire. Most foil potato recipes are made with sliced potatoes, butter, seasonings and wrapped in a packet made from foil.

Foil Packet Potatoes

Packet potatoes can be made as a side dish to the meat at a barbecue. Use a heavy duty aluminum foil that can withstand the high heat found on a grill.

Cook time: 25 min.

Total time: 30 min.


  • 2 baking potatoes with skins on
  • 4 garlic cloves with skins on
  • 2 tbsp. extra-virgin olive oil
  • Coarse sea salt
  • Fresh ground pepper
  • 4 whole sprigs of rosemary
  • 1 tbsp. minced fresh rosemary
  • Lemon wedges
  1. Slice the potatoes
  2. Scrub the potatoes clean under water. Slice them into 1/2 inch rounds.

  3. Season the potatoes
  4. Mix the olive oil, rosemary and garlic in a bowl. Toss the potatoes with this oil mixture. Season as desired with salt and pepper.

  5. Cook the potatoes
  6. Divide the potatoes in half and place each half into a separate aluminum foil packet. Place the packets on the grill directly over the heat. Cook for 25 minutes, turning the packets every 5 minutes.

  7. Serve the potatoes
  8. Remove the potatoes from the packets to a serving bowl. Take out garlic cloves and remove the skins. Chop up the gloves and toss to mix. Add more salt and pepper if needed.
