Foil is a good choice for preparing roasted potatoes over the grill or a cooking fire. Most foil potato recipes are made with sliced potatoes, butter, seasonings and wrapped in a packet made from foil.
Foil Packet Potatoes
Packet potatoes can be made as a side dish to the meat at a barbecue. Use a heavy duty aluminum foil that can withstand the high heat found on a grill.

- 2 baking potatoes with skins on
- 4 garlic cloves with skins on
- 2 tbsp. extra-virgin olive oil
- Coarse sea salt
- Fresh ground pepper
- 4 whole sprigs of rosemary
- 1 tbsp. minced fresh rosemary
- Lemon wedges
- Slice the potatoes
- Season the potatoes
- Cook the potatoes
- Serve the potatoes
Scrub the potatoes clean under water. Slice them into 1/2 inch rounds.
Mix the olive oil, rosemary and garlic in a bowl. Toss the potatoes with this oil mixture. Season as desired with salt and pepper.
Divide the potatoes in half and place each half into a separate aluminum foil packet. Place the packets on the grill directly over the heat. Cook for 25 minutes, turning the packets every 5 minutes.
Remove the potatoes from the packets to a serving bowl. Take out garlic cloves and remove the skins. Chop up the gloves and toss to mix. Add more salt and pepper if needed.
