Cook a pork butt roast in the oven or on the grill. To cook one in the oven, season a bone-in, 5-pound pork shoulder with salt and pepper. Mix 1 cup Creole seasoning and 1/2 cup olive oil and rub over meat.
Roast this in the oven for 30 minutes at 400 degrees Fahrenheit, then for 6 1/2 hours at 250 degrees Fahrenheit.
For the grill, create a rub of paprika, salt, garlic powder, brown sugar, cumin, oregano and pepper, roughly a teaspoon each, to rub on the pork butt. Grill the meat at around 225 degrees Fahrenheit for 5 1/2 hours, then apply wet seasonings every 20 minutes until the meat is finished.
