One way to bake lobster tails is to cover the tail meat with seasoned butter, wrap each one in foil, and bake until the meat is firm and opaque. Another option is to stuff the tails with a buttery lobster and cracker mixture, and bake until golden brown.
To prepare simple baked lobster tails, hold each one with the underside up, cut down both sides of the shell, and then cut across the shell at the base to remove it. Slide a sharp knife across the top of the meat to remove the thin membrane, then slide the knife underneath the meat to loosen it from the top shell. Brush the tail meat with clarified butter. Optional seasonings for the butter include salt, garlic powder and lemon juice. Wrap each lobster tail individually in foil, and bake in an oven preheated to 450 F until the tail meat is fully opaque. This may take roughly 12 to 20 minutes, depending on the size of the lobster tails.
To make baked stuffed lobster tails, remove the lobster meat from 4 lobster tails, and chop them into tiny pieces. Mix the lobster meat with 2 cups crushed butter crackers, 3 tablespoons Parmesan cheese, 2 1/2 teaspoons of melted butter and 2 tablespoons each of Worcestershire sauce and lemon juice. Place the mixture equally into the lobster shell cavity, and place the under the broiler in the oven until the mixture starts to brown.
