Cornish game hens are prepared in many ways, including in an oven, on a grill or in a slow cooker. When preparing Cornish game hens, remember that most recipes consider half of a game hen to be a serving and prepare accordingly.
To make a Cornish game hen in a slow cooker, rub the game hen with a dash of salt and pepper. Insert two sprigs of fresh rosemary into the cavity of the game hen, and place into the slow cooker. In a small bowl, combine 1/4 cup of fig preserves and 1/4 cup of port wine. Mix thoroughly, and pour over the game hen. Cook on high for five hours, and serve sauce with the Cornish game hen.
To roast a Cornish game hen in an oven, add a package of long-grained seasoned rice mix to a baking dish with 1/4 cup of dried cherries, 1 1/2 cups of water and 3 tablespoons of slivered almonds. Mix well, and top with game hens that have been cut in half. Sprinkle 1/2 teaspoon of garlic pepper and 1/4 teaspoon of salt over the game hen.
In a small bowl, combine 1/4 cup of cherry preserves and 2 tablespoons of balsamic vinegar. Brush half of this mixture over the game hen, cover with foil, and bake in a 350 degrees Fahrenheit oven for 30 minutes. Remove foil, brush the remaining mixture over the game hen, and bake for an additional 30 minutes.
