Ricotta cheese that was purchased in a container may be frozen simply by placing the container into the freezer. If the ricotta cheese is part of a prepared dish, cook the dish before freezing to ensure that the ricotta's texture does not change dramatically.
To freeze plain ricotta cheese, divide it proportionately in the amounts needed for a desired recipe before freezing so that only that amount gets defrosted. Each portion should be placed in an air-tight container, and as much air as possible should be removed. The containers should be marked with the date of freezing. Do not keep ricotta cheese frozen for more than two months.
