Place the turkey necks in a large pot, cover them with water and place them on the stove until the water starts to boil. The pot needs to be big, so that when the turkey necks are inside they only reach halfway up the pot. Fill the pot with enough water to where there is only an inch free from the top of the pot.
To ensure a good boil, place a lid on top of the pot immediately after placing the pot on the stove. Put the flame on high and do not start adding vegetables and spices until the necks are boiling for at least 1 to 2 minutes.
