Add blanched chopped green beans and chopped, fresh coriander leaves, then toss again to combine before serving.
To make the peasant soup, warm up vegetable oil in a large pot, then add diced carrots, celery and onion, as well as minced garlic. Season with salt, dried mint and ground turmeric. Cook until the vegetables are tender. Pour in dried green lentils, canned tomatoes, tomato paste and water. Bring the mixture to boil, then turn down the heat and cover the pot, allowing the soup to simmer until the lentils are cooked through. Add cooked pasta shells, canned beans and chopped parsley, then simmer for a few more minutes before serving.
