Morton recommends coarse Kosher salt for brining purposes. The design of the crystals helps them dissolve better, resulting in a clear, even brine. Pork, chicken and turkey are the most-commonly-brined meats. Morton advises against brining beef and lamb since these meats already retain moisture.
