To make spritz dough, mix together the dry ingredients, and then cream the butter and sugar. One recipe calls for sifting 4 cups of floor and then creaming 2 cups of softened, salted butter with 1 cup of granulated sugar. Add eggs and flavorings to the butter mixture. This recipe calls for 2 beaten eggs and 1 teaspoon of vanilla extract. Add food coloring, if desired. Next, gradually add the flour to the wet mixture. Mix well after each addition. The cookie dough shouldn't be so soft that the cookies don't hold their shape. If this is the case, refrigerate the dough for 15 minutes.
To fill the press, turn the plunger rod, and pull it until the rod is all the way up. Unscrew the ring at the end of the press. Place the desired cookie disk inside the ring. Form the dough into a log, and slide it into the press. Screw the ring back on, and use the trigger to press the dough onto an ungreased cookie sheet.
