In addition to boneless, skinless chicken breasts and chopped almonds, typical ingredients in an almond chicken recipe are eggs, butter and oil. Classic seasonings include salt and pepper. Bread crumbs are often used, as well.
One recipe for almond crusted chicken begins by preheating the oven to 400 degrees Fahrenheit. In a medium shallow bowl, mix 3/4 cup of dry bread crumbs with coarse salt and freshly-ground pepper. In a similar bowl, whisk two large eggs with 2 teaspoons of water. Place 1 1/2 cups of sliced, broken almonds in a third bowl.
Take four pieces of boneless, skinless chicken breast -- about 6 to 8 ounces each -- and dip them into the egg mixture, removing any extra egg with your fingers. Place each chicken piece in the crumbs, coating them lightly on both sides. Dip the pieces in egg again, then press the chicken into the almonds, coating on each side.
Over a medium flame, heat 2 tablespoons of unsalted butter and 2 tablespoons of canola oil in a 12-inch ovenproof skillet. Lay the chicken pieces in the skillet, and cook them for about three minutes, until the bottom side is golden brown. Flip the chicken over, and cook for one more minute. Put the pan into the oven, and bake the dish for about 10 minutes until the chicken is thoroughly cooked. This recipe makes four servings.
