Pei Wei Asian Diner advertises that the cooks use fresh ingredients to handcraft customized meals with bold flavors. The cooks roll the egg and spring rolls by hand. They also use woks at 700 degrees Fahrenheit to sear in the flavors. All the restaurant's rice is grown in the U.S.A.
Pei Wei offers an array of sushi rolls, such as kung pao shrimp, mango California and teriyaki crunch rolls. The mango California roll consists of imitation crab rolled with mango, scallions, rice, cucumbers and sesame seeds. The kung pao shrimp roll starts with the mango California roll and adds shrimp, tempura flakes, crushed peanuts, chile flakes and kung pao glaze.
Pei Wei also cooks lettuce wraps with two chicken fillings. One is the traditional chicken with shiitake mushrooms, water chestnuts, scallions, garlic and soy sauce. The other is Thai chicken with citrus soy sauce, onions, red bell peppers, scallions and cilantro. Both come with iceberg lettuce for rolling.
