Cookie bars such as cherry crumb bars and cakes such as pumpkin crumb cake are examples of dessert recipes that use prepared cake mix. Most recipes calling for prepared cake mix call for white or yellow varieties.
To make cherry crumb bars, grease and flour a 13-inch by 9-inch cake pan. In a bowl, combine 1 package white cake mix with 6 tablespoons butter and 1 cup rolled quick oats. Remove 1 cup of the cake crumb mixture, and set aside. Add 1 egg to the remaining cake crumb mixture in the bowl, and mix well. Spoon mixture into the prepared pan, and press down to form a crust. Spread 1 can of cherry pie filling evenly over the crust.
In a large bowl, combine the reserved 1 cup cake crumb mixture with 1/4 cup rolled quick oats, 2 tablespoons butter, 1/4 cup packed brown sugar and 1/2 cup chopped pecans. Sprinkle the crumb topping over cherry filling and bake for 30 to 40 minutes at 350 degrees Fahrenheit.
To make pumpkin crumb cake grease a 9x13-inch baking pan. Reserve 1 cup yellow cake mix from 1 package of cake mix, and set aside. Add the remaining cake mix to a large bowl, and combine with 1 beaten egg and 1/2 cup melted butter. Spread the cake mixture into the prepared pan, and pat down to form a crust. In another bowl, combine 1 can pumpkin puree with 3 beaten eggs, 1/2 cup white sugar, 1/4 cup brown sugar 1 1/2 teaspoons ground cinnamon, pouring the mixture over the crust.
In a small bowl, combine the reserved 1 cup cake mix with 1/2 cup sugar and 3 tablespoons softened butter, sprinkling over filling. Bake for 40 to 45 minutes at 350 degrees Fahrenheit.
