A spice rub for McCormick's Savory Herb Rubbed Roasted Turkey is prepared by mixing 2 tablespoons sage, 1 tablespoon paprika, 1 tablespoon seasoned salt and 2 teaspoons garlic powder in a bowl. Add 1 teaspoon black pepper and 3/4 teaspoon nutmeg, and stir. Set the turkey in a roasting pan with the breast side facing up, and add half of the spice rub to its inside.
Stuff the turkey with 1 large onion cut into wedges and 6 bay leaves. Brush the turkey with oil, and coat with the remaining spice rub. Put 1/2 cup of water in a shallow roasting pan. Place the turkey in the roasting pan, cover with foil, and place the pan on the lowest oven rack. Roast at 325 degrees Fahrenheit for one hour.
Remove the foil, and continue roasting, occasionally basting with the liquid at the bottom of the roaster. Roast for two to 2 1/2 hours, or until a meat thermometer inserted in a thigh reads 175 degrees Fahrenheit. Remove the turkey from the oven, and allow it to cool for 20 minutes before slicing and serving.
The leftover juice at the bottom of the pan can be turned into gravy. Remove any fat in the liquid, and transfer it to a saucepan. Bring it to a boil. Combine 2 cups chicken stock and 1/3 cup all-purpose flour, and add the mixture to the saucepan. Stir until the gravy thickens, and add salt and pepper to taste.
