Cook 1 chopped onion in 2 tablespoons of butter, then add 2 stalks of chopped celery and 3 chopped carrots. After a few minutes, add 4 tablespoons of flour and 4 cups of chicken stock. Simmer the broth, mix in 2 peeled and diced potatoes, and simmer it some more. Add 2 cups of shredded turkey, 1/2 cup of frozen peas and 2 tablespoons of chopped parsley. Spoon the mixture into a baking dish, and overlay it with 1 pie crust before brushing it with 1 beaten egg. Bake the pie at 350 degrees Fahrenheit for 30 minutes.
For the other recipe, cook 1/3 cup of chopped onion in 1/3 cup of butter, then add 1/3 cup of all-purpose flour, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, 1 can of chicken broth and 1/2 cup of milk. Once the mixture thickens, add 2 1/2 cups of shredded turkey and 2 cups of frozen mixed vegetables. Pour the mixture into a pie plate lined with a pie crust, and top with a second crust.
