Pasta e fagioli, or pasta and beans, is a simple, traditional Italian dish prepared with cannelloni beans, garlic, tomatoes, olive oil and hot pepper flakes combined to make a sauce. The recipe is very tasty despite its simplicity and is suitable for beginner cooks.
Pasta and beans:
Prep Time: 20 min.
Cooking Time: 20-22 min.
- 1/8 teaspoon hot pepper flakes
- Three canned and peeled plum tomatoes.
- 1/4 cup olive oil
- Two garlic cloves, minced or finely chopped.
- Three cups cooked cannelloni beans with reserved cooking water
- One pound cooked pasta with cooking water reserved
- 1/2 teaspoon of salt
Step 1: To begin, finely chop the garlic while heating a large saucepan to a medium heat. Add the olive oil to the pan, then fry the garlic and hot pepper flakes for around 30 seconds or until colored.
Step 2: Add the Italian plum tomatoes and a pinch of salt to the pan, stirring well. Make sure to break up the tomatoes well and increase the heat until simmering. Once the tomatoes have mixed with the garlic and pepper flakes, add 3 cups of pre-cooked cannelloni beans and stir well. Add the reserved water from the beans until the ingredients are all covered with liquid, before bringing to the boil.
Step 3:Bring the heat down to a simmer, then add the cooked pasta and reserved water. Simmer and stir well for an additional 2 to 3 minutes before serving.
