Cheddar-chive, ham and cheese and cilantro lime are some toppings for baked potatoes with prep times that require 30 minutes or less. Other toppings include crab, roasted vegetable, and mango and black bean.
For a cheddar-chive topping, mash together 1/4 cup each of butter, sour cream and chopped chives and 2/3 cup of cheddar cheese. To make the ham and cheese, brown diced ham in olive oil and mash with Swiss cheese or top with brie.
A cilantro lime topping consists of 1/2 cup of sour cream, 1/4 cup of chopped cilantro and the zest and juice of 1 lime. Mix, add salt and pepper to taste, and top with salsa. A basic crab topping is a mixture of 4 ounces of crab meat, 1/4 cup of crushed saltines, 2 tablespoons of mayonnaise, 1 tablespoon of lemon juice, 1 teaspoon each of Old Bay seasoning and chopped parsley.
For a roasted vegetable topping, toss 4 quartered shallots, 1 diced butternut squash, and 2 each of diced carrots and parsnips with olive oil. Roast at 400 F for 20 minutes or until the vegetables are caramelized. Use to top sweet potatoes.
Mango and black bean topping is a 15-ounce can of black beans, drained and rinsed, 1/2 cup of diced tomato, 1 minced jalapeño, 1 diced mango, the juice of 2 limes, 1 tablespoon of olive oil and 2 tablespoons each of chopped cilantro and diced onion.
