Three of the top authentic Mexican food recipes according to the Food Network are chicken tostadas, chicken mole enchiladas and chiles rellanos. The network’s list includes 53 recipes from its popular TV series and chefs.
For chicken tostadas, top fried tortillas with refried beans and cheese, and broil until the cheese melts and lightly browns. Mound a mixture of cooked, shredded chicken, lime juice, salt and pepper, and coriander on the tortillas, and top with avocado, salsa and sour cream.
Chicken mole enchiladas combine sautéed onion and garlic, ancho chiles, chicken stock, peanut butter, oregano and shredded, toasted tortillas in a blender. Simmer the mole on the stove for twenty minutes, and add chocolate to finish.
Dip fried tortillas in warm mole sauce, and fill with shredded chicken, roll the tortillas, and pour more mole over the enchiladas.
To make chiles rellanos, first broil poblano chiles until charred, and remove the skin. Halve and remove the seeds, add Oxacan string cheese to the chile's cavities, and pin together with a large toothpick.
Dip the chiles in flour and then a mixture of beer, flour, cumin, baking powder and salt. Deep fry until golden brown, and top with tomato sauce.
