One example of a recipe that uses toasted coconut flakes is Toasted Coconut Fudge by Elizabeth LaBau, candy expert for About.com. To make this recipe, start by lining an 8-by-8-inch pan with foil, and spray the foil with nonstick cooking spray. Melt 4 ounces of butter with 3/4 cup coconut cream, 2 cups sugar and 1 teaspoon salt. Cook this mixture at a boil for five minutes, stirring continuously.
Remove mixture from heat, and add 12 ounces of white chocolate chips and 7 ounces of marshmallow cream. Stir until it is all melted together, and add 1 teaspoon vanilla and 1 1/2 cups toasted coconut flakes. Pour this mixture into the prepared pan, and cover the top with another 1/2 cup toasted coconut flakes. Let it set in the fridge for one to two hours before serving.Learn more about Cooking
