To increase the shelf life of pancetta, do not open the package until ready to use. After opening, keep it refrigerated and tightly wrapped in aluminum foil, plastic wrap or a sealed container away from raw foods. Pancetta lasts up to three weeks when properly refrigerated.
Freezing pancetta also increases it shelf life. Place it in heavy-duty freezer bags a number of days before the refrigerator expiration date. If freezing for longer than 2 months, pancetta should be wrapped using airtight, heavy foil and placed in a plastic freezer bag to avoid freezer burn.
