To freeze fresh bell peppers, remove all seeds and membranes from the peppers, then slice the peppers into strips. Lay the peppers on a baking sheet, and put them in the freezer for about an hour. Transfer the frozen peppers to airtight containers or bags.
Once placed back into the freezer, the peppers should last about 12 months. Besides ensuring the seeds and membranes are removed, pepper-lovers should also wash and dry the peppers thoroughly.
When freezing hot peppers such as jalapeños, cut off the stems before following the additional steps. They do not need to be sliced before freezing.
