Tehina is a sesame sauce. Its ingredients are 3/4 cup tahini (sesame paste), 3/4 cup water, 1/4 to 1/2 teaspoon salt, 1/4 cup lemon juice and 4 minced garlic cloves. Cayenne pepper and 1/4 teaspoon ground cumin are optional ingredients.
To make the sauce, whisk the tahini and water together. Next, add the salt, lemon juice, garlic, cayenne and cumin. Taste the sauce and add salt, lemon juice and cayenne as needed. Add more water if the sauce is too thick. Serve the sauce cool or at room temperature.
Tehina is suitable for use as a salad dressing, a dip or sandwich spread.
