Whole apples can be stored in freezer bags, and peeled, cored and sliced apples can be frozen on a tray and transferred to a freezer bag. To prevent browning, coat the apple slices in lemon juice, salt water or an ascorbic acid mixture before freezing.
To freeze apples that are going to be used in a pie filling, first, peel, core and slice the apples. Sprinkle the apple slices with sugar and spices, then freeze in pie plates. Place the apples in freezer bags once the apples are frozen. To make a pie, place the frozen apple slices into a pie crust, cover with dough and cook the pie. The cooking time for the pie may need to be increased when using frozen apples.
