To make the pie, peel and thinly slice 8 cups of tart apples. Combine 1/3 cup of thawed apple juice concentrate with the sugar-substitute equivalent of 8 teaspoons of sugar. Add 2 teaspoons corn starch and 1 teaspoon of ground cinnamon to the mixture.
Line a pie plate with a ready-made 9-inch pie crust. Place the apples in the bottom of the crust, and pour the apple juice and cinnamon mixture over the apples. Dot the mixture with 1 tablespoon of butter.
Roll out another 9-inch pie crust for the topping, and cut slits in the crust. Place the crust over the filling, and seal and flute the crust’s edges.
Bake the pie at 375 F for 35 minutes. Increase the oven temperature to 400 F, and bake the pie for an addition 15 to 20 minutes or until the apples are tender.
Each serving contains 337 calories, 17 grams of fat, no cholesterol and 223 milligrams of sodium.
