Some tasty seven-layer cake recipes include seven-layer lemon cake with blackberry buttercream filling and seven-layer yellow cake with chocolate ganache. Another good recipe is a traditional dobostorte or Hungarian seven-layer cake.
To make the seven-layer lemon cake, whisk together 4 1/2 cups of all-purpose flour, 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt in one bowl, and cream together 12 ounces of softened butter, 2 1/2 cups of sugar and 6 eggs one at a time in another bowl. Fold the flour mixture and 2 3/4 cups of milk into the butter mixture in parts, and mix in 1/4 cup of fresh lemon juice and 1 1/2 teaspoons of vanilla extract. Spoon 1 3/4 cups of batter into four greased and parchment paper-lined pans, bake them at 375 degrees Fahrenheit for 18 to 20 minutes, and repeat the process with three more pans.
While the cake layers cool, make the blackberry buttercream filling by crushing the juice from 1 cup of fresh blackberries into a saucepan along with 2 tablespoons of sugar and bringing the mixture to a boil until it reduces and thickens. Cream together 4 ounces of butter and 3 1/2 cups of powdered sugar, and stir in the blackberry reduction, 1 teaspoon of vanilla extract and 2 tablespoons of milk. Spread the frosting between the cake layers, and frost the outside of the cake with lemon buttercream made by beating together 8 ounces of butter, 8 cups of powdered sugar, 2 tablespoons of milk, and the juice and zest of 1 lemon.
