Lidia's Italy has a simple and easy-to-follow recipe for grilled sea bass that is served with a parsley and lemon sauce, and seasoned with garlic. The recipe makes four servings.
In a bowl, combine 1/2 cup of olive oil, 5 sliced garlic cloves, 1/4 teaspoon of salt and 1/2 teaspoon of freshly ground pepper. In another bowl, combine 4 cloves crushed and peeled garlic, 1/4 cup of olive oil, 1/4 teaspoon of salt and freshly ground black pepper. Heat a grill or preheat the oven to 475 F, and brush four 1 1/4-pound whole sea bass that have been eviscerated and sealed with the olive oil mixture. Cover the fish tails with aluminum foil.
Grease the grill lightly, and grill the fish for 25 to 35 minutes, carefully turning twice without breaking the fish and brushing with more oil. If the grilled fish lacks color, place them under the broiler for 1 to 2 minutes until they are browned and crisp. Remove the garlic from the first bowl, and add 3 tablespoons of minced Italian parsley and 3 tablespoons fresh lemon juice. Whisk until thoroughly combined. Spoon 1 tablespoon of the sauce over each fish, and serve alongside lemon wedges.
