Some quick Taste of Home recipes include wild rice salad, chicken Dijon and coffee mousse. For the quick wild rice salad, combine in a bowl 2 cups of cooked wild rice with 4 chopped hard-boiled eggs, 1 cup of cubed cheddar cheese and 1/4 cup of sliced pimento-stuffed olives. Stir in 1/2 cup of mayonnaise, cover and chill the salad for two hours. Just prior to serving, toss in 1/2 cup of chopped pecans.
For quick chicken Dijon, cook 2 boneless, skinless chicken breast halves in 2 tablespoons of butter for five minutes on each side. Remove chicken, and keep it warm. Add 3 tablespoons of white wine to the skillet, cooking and stirring over medium heat for two minutes. Pour in a mixture of 1/3 cup of ranch dressing blended with 1 tablespoon of Dijon mustard. Cook while stirring, until heated through. Pour over chicken, and serve with cooked rice or pasta.
Make quick coffee mousse by sprinkling 1 1/2 teaspoons of unflavored gelatin over 2 tablespoons of cold water, letting it stand for one minute. Boil 2 tablespoons of cold water in a small saucepan, adding 1 teaspoon of instant coffee granules. Add the gelatin mixture to it, and cook and stir the mixture over low heat until the gelatin is dissolved. Remove from the heat, stirring in 1 teaspoon of sugar and 1 ice cube, until the ice melts and the mixture begins to thicken. Transfer to a bowl, and add 1/3 cup of frozen whipped topping, beating well. Fold in 2/3 cup of additional whipped topping, and spoon the mousse into two dessert bowls. Top each with a spoonful of whipped topping, and refrigerate for two hours. To serve, top each with 1/4 teaspoon of crushed instant coffee granules.
