For the chickpea and mint rice, heat 1 teaspoon of oil in a large, nonstick pan. Add 1 bay leaf, 1/2 cup of thinly sliced onions and 1 teaspoon of finely chopped garlic. Sauté over medium heat until the onions are brown. Stir in 2 cups of soaked, cooked brown rice; 1/2 cup of chickpeas; 1/2 cup of mixed vegetables, chopped; and salt to taste. Cook the mixture for one to two minutes.
Add 1 teaspoon of green chili paste, 1/2 teaspoon of lemon juice and 1/4 cup of finely chopped mint leaves. Cook the mixture for an additional minute. Serve hot with curds.
To make the green onion and ginger dip, stir together in a bowl 1 tablespoon of finely chopped ginger, 1 cup of finely chopped spring onions, 1 teaspoon of sugar and salt to taste. Set the mixture aside. Heat 2 tablespoons of oil to its boiling point. Pour the oil over the green onion-ginger combination. Mix well. Allow the dip to cool completely before serving it.
Dalal recommends serving this dip at parties as an accompaniment to starters, such as her creamed corn cake or crispy fried corn.
